The weather is getting chilly and that means I’m usually in the kitchen a lot more making desserts.  My family loves my Easy Creamy Peanut Butter (Microwavable) Fudge which I make all the time, however it was time to try something different.  I had some marshmallows and walnuts on hand so I decided to try Rocky Road Fudge.  It’s another easy microwavable recipe that only requires a few staple ingredients, and tastes quite delicious!  With the holidays coming up, this is the perfect recipe to take to parties because it travels well, and everyone loves rich creamy fudge.  You can even package this up and give as gifts too.  No matter who you make this for, you’re going to love it!

Creamy Rocky Road Fudge made in the Microwave

Ingredients

  • 2 cups 12-oz. pkg. Semi-Sweet Chocolate chips
  • 1 can 14 oz. Sweetened Condensed Milk
  • 1 teaspoon vanilla extract
  • 3 cups miniature marshmallows
  • 1 1/2 cups coarsely chopped walnuts

Instructions

  • Line an 8 x 8-inch baking pan with foil; grease lightly.
  • Place the chocolate chips and sweetened condensed milk in large, microwave-safe bowl.
  • Cook on high for 1 minute.
  • Remove and stir (if necessary, microwave at additional 10- to 15-second intervals until all the chips are melted).
  • Stir in vanilla extract.
  • Fold in marshmallows and nuts.
  • Press mixture into prepared baking pan.
  • Refrigerate until ready to serve.
  • Lift from pan and remove the foil.
  • Cut into pieces, and enjoy!
