My kids love ice cream and with the warm weather we eat it a lot! So I’m always looking for healthier options and when I saw this 2 Ingredient Peach Ice Cream that only uses frozen peaches and coconut milk, I knew I had to try it. Plus it doesn’t require an ice cream machine either…only a food processor so anyone can make this at home. It’s creamy from the coconut milk and sweet from the peaches, and so simple to make. I can’t wait to try this with other fruit too! 

2 Ingredient Peach Ice Cream

Ingredients

  • 2 c. peaches sliced and frozen
  • 1/4 c. unsweetened low-fat coconut milk

Instructions

  • Puree ingredients in a food processor until perfectly smooth.
  • Serve immediately.
