Rich cream cheese and greek yogurt mixed together
for the perfect creamy no-bake cheesecake!
It was our 21st anniversary the other day and I wanted to make my husband something special, but didn’t want to turn the oven on. He loves cheesecake so I came up with this simple recipe that doesn’t require any baking! All you have to do is mix a few ingredients together, place it in the freezer to set up and then enjoy. I made mine with crushed oreo’s and vanilla greek yogurt, but you can choose whatever flavors you like. How about a shortbread crust with strawberry cheesecake yogurt; oreo crust with cherry yogurt, graham cracker crust with boston cream pie yogurt…the possibilities are endless and I can’t wait to try them all! Ingredients are as follows:
2 (8 ounces) cream cheese, softened
1/2 C sugar
1 (5.3 ounce) vanilla greek yogurt
10 oreo cookies, crushed
2 Tbsps. butter, melted
1 Tbsp. vanilla
Directions:
Line a muffin pan with paper liners; set aside.
Mix the melted butter and cookie crumbs together.
Take a tablespoon or so and pat it into the bottom of each liner; reserve the rest for the topping. Set aside.
Cream the cream cheese and sugar together.
Whip in the greek yogurt and vanilla.
Evenly distribute between the 12 liners.
Sprinkle the reserved crumbs on top.
Place in the freezer for about an hour to set up; serve and enjoy!
