Lemony Cooler: A Light & Refreshing Drink

I love making brunch on the weekends. There’s something about a slow weekend morning, a table filled with good food, and nowhere we need to rush off to that makes it feel a little extra special. It gives us a chance to sit down together, reconnect after a busy week, and enjoy some quality family time. It has easily become one of my favorite times of the week. My husband and I are happy with a cup (or two!) of coffee with brunch, but I’m always looking for something a little different that I can serve to the kids. Of course, it needs to be something everyone will enjoy because I definitely don’t want to make several different drinks to go along with everything else on the table!
When I came across this recipe for Lemony Cooler, I knew I wanted to give it a try. I had just bought a fresh bag of lemons, so the timing couldn’t have been better. This drink is such a simple combination, but it turns into something really delicious. White grape juice gives it a light fruity sweetness, fresh lemon juice adds that bright citrus flavor, and club soda gives it just the right amount of fizz. It’s sweet and refreshing without feeling too heavy, which makes it perfect alongside all of those wonderful brunch foods.
I also tossed in some pretty ice cubes before bringing the pitcher to the table. It’s such a simple little touch, but it makes an everyday drink feel a little more special. You could freeze lemon slices, berries, grapes, or even small pieces of fruit into your ice cubes if you want to dress it up for a brunch, shower, party, or holiday gathering. Light, bubbly, citrusy, and refreshing, this Lemony Cooler is the perfect accompaniment to brunch—and it’s something both kids and adults can enjoy.
Lemony Cooler
Ingredients
- 3 C white grape juice
- 1/2 C sugar
- 1/2 C lemon juice
- 1 bottle 1 liter club soda
- ice cubes
- fresh fruit optional
Instructions
- In a pitcher, combine the grape juice, sugar and lemon juice; stir until sugar is dissolved.
- Refrigerate until serving.
- Just before serving, stir in the club soda.
- Serve over ice and garnish with fruit if desired.
Make It Pretty
For an extra-special presentation, make decorative ice cubes ahead of time. Simply add small pieces of lemon, berries, grapes, or other colorful fruit to an ice cube tray, fill with water, and freeze. Add them to the pitcher or individual glasses just before serving. It’s an easy way to make a simple weekend brunch feel a little more special—and sometimes those little details are the ones that make our time around the table even sweeter.
