How to Make the Perfect Glazed Lemon Loaf

Glazed Lemon Loaf Cake
Ingredients
Batter:
- ¾ cup butter melted
- 2 tbsp vegetable oil
- 1 cup granulated sugar
- 1½ tbsp lemon zest
- 3 large eggs
- ½ cup milk
- 3 tbsp lemon juice
- 1¾ cups all-purpose flour
- 2 tbsp cornstarch
- 1½ tsp baking powder
- ½ tsp salt
Lemon Glaze:
- 1 cup powdered sugar
- 1½ tbsp lemon juice
Instructions
- Preheat oven to 325°F (165°C). Grease and line an 8.5 x 4.5 inch loaf pan.
- In a large bowl, whisk together melted butter, oil, sugar, lemon zest, eggs, milk, and lemon juice.
- Sift in flour, cornstarch, baking powder, and salt. Mix until just combined.
- Pour into the prepared pan and bake for 60 minutes, or until a skewer comes out clean.
- Let cool for 15 minutes, then remove from pan.
- For the glaze, whisk powdered sugar and lemon juice until smooth. Pour over the loaf.
