Instructions
Preheat oven to 325°F (165°C). Grease and line an 8.5 x 4.5 inch loaf pan.
In a large bowl, whisk together melted butter, oil, sugar, lemon zest, eggs, milk, and lemon juice.
Sift in flour, cornstarch, baking powder, and salt. Mix until just combined.
Pour into the prepared pan and bake for 60 minutes, or until a skewer comes out clean.
Let cool for 15 minutes, then remove from pan.
For the glaze, whisk powdered sugar and lemon juice until smooth. Pour over the loaf.
