The Best Fudgy Cocoa Toffee Brownies

I love a good fudgy brownie! I’m not a fan of cake-type brownies…I like that dense, rich, chocolatey sensation when I sink my teeth into a delicious fudgy brownie. Making brownies from scratch is one of the simplest recipes to make and there are so many combinations you can try. Coffee Brownies with Coffee Frosting, Peanut Butter Toffee Cheesecake, and Chocolate Cream Cheese Earthquake Brownies are a few of our favorites, and now we can add these Fudgy Cocoa Toffee Brownies to the list too!

 

 

The Best Fudgy Cocoa Toffee Brownies

Ingredients

  • 1/2 cup unsalted butter melted
  • 1 tablespoon oil
  • 1 1/8 cup superfine sugar (caster sugar or white granulated sugar)
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 C english toffee bits

Instructions

  • Preheat oven to 350°F. Grease an 8-inch square baking pan with cooking oil spray. Line with parchment paper; set aside.
  • Combine melted butter, oil and sugar together in a medium-sized bowl; whisk well for about a minute.
  • Add the eggs and vanilla; beat until lighter in color (another minute).
  • Sift in flour, cocoa powder and salt.
  • Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat).
  • Lightly fold in the toffee bits.
  • Pour batter into prepared pan.
  • Bake for 20-25 minutes, or until the center of the brownie is just set to the touch; a toothpick stuck in the center will come out dirty.
  • Remove and allow to cool to room temperature.
  • Slice, serve and enjoy!
