The Best Fudgy Cocoa Toffee Brownies

unsalted butter
melted

oil

superfine sugar
(caster sugar or white granulated sugar)

large eggs

pure vanilla extract

all purpose flour
1/2
cup
unsweetened cocoa powder

teaspoon

Instructions
Preheat oven to 350°F. Grease an 8-inch square baking pan with cooking oil spray. Line with parchment paper; set aside.
Combine melted butter, oil and sugar together in a medium-sized bowl; whisk well for about a minute.
Add the eggs and vanilla; beat until lighter in color (another minute).
Sift in flour, cocoa powder and salt.
Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat).
Lightly fold in the toffee bits.
Pour batter into prepared pan.
Bake for 20-25 minutes, or until the center of the brownie is just set to the touch; a toothpick stuck in the center will come out dirty.
Remove and allow to cool to room temperature.
Slice, serve and enjoy!
