If you’ve been following along for awhile, you know I’m a coffee lover!  I love to drink it throughout the day, every day.  So when I saw the Food Network Magazine had 50 Recipes for Coffee Lovers, I knew I’d be making some.  Honestly, it was a hard decision on which recipe to make first, but my son said the brownies looked good so that’s where we started.  These brownies are rich, fudgy, and quite delicious with the addition of coffee, but the frosting is what takes it over the top.  I was literally eating it out of the bowl and licked the bowl clean because I couldn’t get enough of it!  If you’re a coffee lover like me then you’re going to enjoy these Coffee Frosted Coffee Brownies just as much as I did.  

Coffee Frosted Coffee Brownies

Ingredients

brownies

  • 1 C butter
  • 4 ounces semisweet chocolate chopped
  • 2 C sugar
  • 3 Tbsp. instant espresso powder
  • 4 eggs
  • 1 1/2 C flour
  • 1/3 C unsweetened cocoa powder
  • 1/2 tsp. salt

frosting

  • 1 Tbsp. instant espresso powder
  • 1 Tbsp. milk
  • 1/2 C butter softened
  • 1/4 tsp. salt
  • 1 1/2 C confectioners' sugar

Instructions

  • Preheat oven to 350 degrees; line parchment paper into a 13 x 9 inch baking pan and spray with nonstick cooking spray.
  • In a saucepan over medium heat, melt butter and the chocolate.
  • Remove from heat and whisk in sugar, espresso powder and eggs.
  • Stir in flour, cocoa powder and salt.
  • Pour into baking pan.
  • Bake 30 - 35 minutes; until a toothpick in the center comes out clean.
  • Cool in the pan.

frosting

  • In a bowl, mix espresso powder and milk together; set aside.
  • In another bowl, cream the butter and salt until fluffy.
  • Slowly mix in the confectioners' sugar and milk/coffee mixture.
  • Once combined, increase speed and mix until fluffy.
  • Spread on the cooled brownies.
  • Slice, serve and enjoy!
