This recipe comes together in a matter of minutes since it starts with a lemon cookie mix. Then you add in a few extra ingredients and you have a rich, delicious and creamy lemon bar. I thought about adding only butter to the mix, however I decided to add in some cream cheese to take it over the top. It really makes the crust and crumble quite unique!
base:
1 (15.25 ounce) box of lemon cookie mix
1/4 C cold butter
4 ounces cream cheese
filling:
20 ounces cream cheese
1/2 C sugar
2 Tbsp. flour
1 tsp. vanilla extract
2 eggs
directions:
Preheat oven to 350 degrees; grease a 9 x 13″ pan.
Place the cookie mix, butter and cream cheese into a bowl.
Mix (cut) into the cookie mix until crumbly.
Take 3/4 of the mixture and pat it into the bottom of the pan.
Bake for 8-10 minutes; until a little brown.
While it’s baking, cream together the cream cheese and sugar.
Mix in the flour, vanilla extract and eggs.
Evenly spread on top of the par-baked crust.
Take the remaining cookie mixture and sprinkle on top.
Bake for an additional 35-40 minutes.
Allow to cool completely before slicing…enjoy!
