Best Fudgy Cocoa Brownies

I don’t know about you, but we’ve been baking a lot due to the shut-in.  My kids love brownies so we decided to make a few batches from other blogs and see what recipe we liked the best!  Now don’t get me wrong, we still have our favorites like Coffee Frosted Coffee Brownies and Peanut Butter Cheesecake Brownies , however we wanted to try plain old brownies with no filling or toppings. Once we narrowed a few recipes down we got to baking and we found a winner.  Cafe Delites was our favorite and I’m thinking it’s due to the melted butter.  I feel it gives it that extra fudgy texture and taste which we all love.  Plus it’s made in one bowl so that’s always a favorite…easy clean up!  If you’re looking for an easy and delicious fudgy brownie recipe then make sure you give these a try!

Best Fudgy Cocoa Brownies

Ingredients

  • 1/2 cup unsalted butter melted and keep hot
  • 1 tablespoon cooking oil
  • 1 1/8 cup sugar
  • 2 large eggs I like to use room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 350°F.
  • Lightly grease an 8 x 8" baking pan with cooking oil spray.
  • Combine hot melted butter, oil and sugar together in a medium-sized bowl; mix until combined.
  • Add the eggs and vanilla; mix for another minute.
  • Add the flour, cocoa powder and salt.
  • Gently fold the dry ingredients into the wet ingredients until combined (do not over mix).
  • Pour batter into prepared pan, smoothing the top out evenly.
  • Bake for 20-25 minutes, or until the center of the brownies no longer jiggles and is just set to the touch.*
  • Remove and allow to cool to room temperature before slicing.

Notes

*If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies.
