I love a good coffee cake, and so does everyone else in our family!  With four kids, a husband, two dogs and a cat, we go through a lot of food, which means I go grocery shopping a lot!  I actually love to grocery shop, and one of my favorite places to go is Costco.  I love the selection they have, I can buy larger quantities, and they have everything I need all in one place.  Right now they have an amazing sale where you get $2.50 off a twin pack of I Can’t Believe it’s not Butter (valid 5/14 – 6/19 at select locations). 

I like buying the twin pack because it saves me money and also allows me to make some extra goodies for my family, friends and neighbors.  It tastes just like butter, has no hydrogenated oils, and it has less fat than butter.  It’s creamy goodness is a healthier option and the recipes still taste great! 

After I picked some up, I decided to make a Cinnamon Apple Coffee Cake with a Vanilla Glaze so I could share it with some of my neighbors.  The recipe is simple to make and it bakes up beautifully.  It’s not too sweet, and the addition of sour cream keeps the cake so moist. 

I also decided to add an oat crumble on top which gives it a little toasted flavor and balances the cake out nicely.  To top it off, I drizzled on a vanilla glaze and makes the perfect coffee cake.

Once the coffee cake was cool, I cut it into slices, placed them on a plate, wrapped them up and went to do some deliveries.

Everyone was so grateful!  Nothing brings out a moment of glee faster than when you present someone with a tasty and delightful surprise.  It’s all the more rewarding when you see their eyes light up and their smile stretch across their face, full of appreciation.

Cinnamon Apple Coffee Cake with a Vanilla Glaze

Ingredients

batter

  • 3/4 C brown sugar
  • 1/4 C I Can't Believe it's Not Butter
  • 1 egg
  • 1/2 C sour cream
  • 1 tsp. vanilla
  • 1 1/2 C all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 apple peeled, cored and diced
  • 1 tsp. cinnamon

crumble

  • 1/4 C I Can't Believe it's Not Butter
  • 3 Tbsp. brown sugar
  • 2 Tbsp. granulated sugar
  • 1 tsp. vanilla
  • 1/2 C flour
  • 1/2 C oats

glaze

  • 1/2 C powdered sugar
  • 1 tsp. vanilla
  • 1-2 Tbsp. cream

Instructions

  • Preheat oven to 350 degrees; grease a 9" springform pan.
  • In a bowl, mix the brown sugar, I Can't Believe it's Not Butter, egg, sour cream and vanilla until combined.
  • Fold in the flour, baking powder and salt.
  • Pour into greased pan.
  • Toss the diced apples in the cinnamon and layer them on top of the batter; set pan aside.

For the crumble

  • Cream together the I Can't Believe it's Not Butter, both sugars and vanilla.
  • Mix in the flour and oats until combined.
  • Place dollops of the mixture on top of the apples.
  • Bake for 25-30 minutes; until a toothpick in the center comes out clean.
  • Remove from oven and allow to cool.
  • While it's cooling, mix together the powdered sugar, vanilla and enough cream to make a drizzle.
  • Drizzle the glaze all over the coffee cake.
  • Slice, serve and enjoy!
