Chocolate and strawberry go together perfectly, so I thought I’d combine the two to make a Chocolate Strawberry earthquake cake for Valentine’s Day! Earthquake cakes are simple to make and one of our favorite types of cake. We’ve made chocolate fudge, pumpkin, and red velvet too. All of the combinations have been divine! The combination of cake, cream cheese and chocolate chips is amazing. Sometimes people are deterred with using a cake mix. I like to bake from scratch as much as I can, however sometimes using items, like a cake mix, works better. That is the case for this Chocolate Strawberry Earthquake Cake. I tried making it from scratch and honestly it tastes better using the mix. Plus it’s easier and more convenient. By adding the additional ingredients to the recipe makes it impossible to tell that you started with a mix.
Ingredients are as follows:
- 1 box Strawberry Cake Mix (plus the ingredients needed to prepare the cake)
- 1/2 C butter, melted
- 8 ounces cream cheese, room temperature
- 1 tsp. vanilla
- 2 C powdered sugar
- 1 C semi-sweet chocolate chips
Directions:
Preheat oven to 350 degrees; grease a 9×13″ pan.
Mix the melted butter, cream cheese, vanilla, and powdered sugar together.
Fold in the chocolate chips; set aside.
Prepare cake mix according to the package directions. Pour batter into prepared pan.
