Strawberry-Coconut Bundt Cake

 

A delicious Strawberry-Coconut bundt cake featured from Gooseberry Patch!
Our third featured recipe from Gooseberry Patch’s newest cookbook: Simple Shortcut Recipes is Strawberry Coconut Pound Cake.  You start with a strawberry cake mix, add in some other ingredients, mix them up (in one bowl) and in less than an hour you’re done.  Not only do you have a delicious cake, but a beautiful one too.  I love the vibrant  pink color of this cake!  In the cookbook it even states that it doubles as a centerpiece since it’s so pretty!  I love doing reviews for Gooseberry Patch and I’m very grateful that they allow me to do them.  So to show my appreciation I like to give away a little gift to go along with the cookbook.  Since I love coffee, I decided to buy a pack of coffee pot holders, a coffee tea towel, and a set of coffee dish rags.

Strawberry Coconut Pound Cake

Ingredients are as follows:

1 (18.25 ounce) package strawberry cake mix
1 (3.5 ounce) package instant coconut pudding mix
1 (3 ounce) package strawberry jello
4 eggs
1 C water
1/3 C oil
 
Directions:
 
Preheat oven to 325 degrees; grease a bundt pan.
 
 
In a bowl, beat eggs until pale yellow.
Add the cake mix, pudding mix, jello, water and oil.
Mix until thoroughly combined.
Pour into prepared bundt pan.
 
 
Bake for 55-60 minutes, or until a toothpick comes out clean.
 
 
Cool in pan for 20 minutes; invert onto a plate.  Slice, serve and enjoy!

    Shortcut is to keep some salad dressings and use for marinade when I don't have time to make my own.

  6. I have a shortcut for Scalloped potatoes- buy 3 boxes of cheap scalloped mixes, prepare as directed but add 2 cups of shredded cheddar cheese, some diced onions and 2 jars of "real" bacon bits. Put all in a casserole dish and throw it in the oven! Everyone will love it won't know the difference.

  34. My favorite shortcut is to use refrigerated pie crust when making fruit pies. Sometimes in the summer I also use a premade graham cracker crust in place of a baked crust. It cuts down on a lot of prep time and keeps the kitchen cool!
