Red Velvet Earthquake Cake

I’ve never tried an Earthquake cake before, and honestly I can’t believe I waited so long!  They’re usually made with a German chocolate cake mix, however I wanted to use red velvet and I also prepared it in a different way.  Instead of putting the coconut on the bottom, I mixed mine with the cream cheese, tossed in some chocolate chips, and skipped the nuts.  This cake was so moist and delicious!  I love how simple it is to make…and it is so good it doesn’t even need a frosting.  If you’re in a hurry and need a quick and easy dessert, make sure you try this one…you won’t be disappointed!

Don’t forget to try Chocolate Fudge and Pumpkin too!

Ingredients are as follows:1 box Red Velvet Cake Mix  (plus the ingredients needed to prepare the cake)
1/2 C butter
8 ounces cream cheese, room temperature
1 tsp. vanilla
2 C powdered sugar
1 C semi-sweet chocolate chips
1 1/2 C coconut

Directions:

Preheat oven to 350 degrees; grease a 9×13″ pan.

Melt the butter either in the microwave or on the stove.

Mix in the cream cheese, vanilla, and powdered sugar.

Fold in the chocolate chips and coconut; set aside.

Prepare cake mix according to the package directions.

Pour batter into prepared pan.

Spoon dollops of the cream cheese mixture onto the batter leaving a 1″ edge.

Lightly swirl the batter around continuing to leave a 1″ edge.

Bake in preheated oven for 40-45 minutes.  Allow to cool before slicing.

Slice, serve and enjoy!

    definitely going to make this for my granddaughter, but she’s not a fan of chocolate chips so I am going to use white chocolate chips, she likes those!! And Red Velvet is her favorite cake, so I can’t wait!! Thank you!!

  2. Does this cake need to be refrigerated? I’ll be traveling 3 hours.

    1. It will be okay for traveling, however put it in the fridge overnight if there are leftovers.

  4. This may be a silly question, but why is it called an "earthquake" cake. I know a volcano cake is called that because of the liquid filling that oozes out of thst cake, it but I don't get the name for this one.
