Chocolate Cream Cheese Tunnel Cake

Ingredients

Cake

  • 2 C sugar
  • 1 3/4 C flour
  • 3/4 C cocoa
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 eggs
  • 6 ounces Greek yogurt or sour cream
  • 1/2 C oil
  • 2 tsp. vanilla
  • 1 C hot coffee or hot water

Filling

  • 8 ounces cream cheese softened
  • 2 eggs
  • 1/2 C sugar
  • 1/4 C flour
  • 1 tsp. vanilla

Instructions

  • Pre-heat oven to 350 degrees; grease and flour a nine inch tube pan.Put sugar, flour, cocoa, baking powder, baking soda and salt in a bowl. Mix until combined.
  • Add the eggs, yogurt, oil and vanilla. Mix again.
  • Once the dry and wet ingredients are mixed together, slowly pour the hot coffee in and mix (by hand or else you’ll have a big mess) until incorporated.
  • Pour chocolate batter into prepared tube pan; set aside. Now cream together the cream cheese, eggs, sugar, flour and vanilla.
  • Pour the cream cheese mixture on top of the chocolate batter. Do not mix, this will sink during baking, giving you the “tunnel” effect.
  • Bake in pre-heated oven for 50-55 minutes, or until a tooth pick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes. Remove from pan and flip it right side up so your cream cheese tunnel is on top.
  • Slice, serve and enjoy!

Notes

You can add a chocolate icing, however it is not necessary!

You can add nuts or chocolate chips or even a chocolate glaze/icing on top, however it’s not necessary.  One ingredient I do recommend is VANILLA BEAN KINGS vanilla extract.  It’s the best I’ve tried, it’s organic and made with Bourbon Madagascar Vanilla Beans so it has an intense vanilla flavor.
