There’s something comforting about sinking your teeth into warm, soft raisin cookies; the blend of flavors and textures will transport you! If you’re a fan of cookies that melt in your mouth and offer a burst of natural sweetness, then this recipe is for you. You’ll have a delicious cookie with just the right amount of butter, sugar, and a touch of vanilla! Plus the plump raisins add a delightful chewiness that complements the cookie’s soft texture. Today we’re going to share the recipe so you can make a batch, share with your loved ones and make lasting memories.
Ingredients are as follows:
1 1/2 C raisins
1 1/4 C water
1 tsp. vanilla
1 C butter, softened
1 C sugar
1/2 C brown sugar
2 eggs
1 tsp. vanilla
3 1/2 C flour
1 tsp. baking soda
1/2 tsp. salt
Directions:
Pre-heat oven to 350 degrees and spray cookie sheet(s) with non-stick cooking spray.
Put the raisins, water and vanilla into a pot and bring to a boil. Boil for one minute, turn off the heat; set aside to cool.
While the raisins are cooling, cream together the butter and sugars.
After those are creamed together, add eggs and vanilla; mix again.
Add the flour, baking soda and salt. Mix until incorporated.
Add the raisins and liquid; mix until combined. Adding the liquid from the raisins is what makes these cookies so flavorful and moist. The dough will look a little runny, however do not add more flour or you will end up with a dry cookie.
Drop tablespoons of dough onto prepared cookie sheet(s) about two inches apart. (I used foil and cooking spray since my cookie sheets are old!)
Bake in pre-heated oven for eight to ten minutes (the cookies will feel slightly firm to the touch). Remove from pan, allow to cool before serving.
Take a bite and enjoy!
I need these cookies in my cookie jar, then I could just reach over and have one, they look awesome! Thank you so much for sharing with our 1st Anniversary Party at Full Plate Thursday. Have a great week end and come back soon!

Those look delicious. I live in PA and we make filled cookies, but these look much easier! Thanks for posting.
That's an interesting recipe. It sounds really good. I've got a muffin recipe that calls for boiling the raisins in liquid (apple juice, I think), but you don't use the liquid in the muffins. I like that idea though.
I love this.. an easy raisin-filled cookie. I made some real filled ones last month and they were so much work. These look just as good and much faster. Thanks for sharing.
Thank you for participating in the Smackdown Battle! Best of luck to you. These cookies sure look delicious! 🙂
