There’s something comforting about sinking your teeth into warm, soft raisin cookies; the blend of flavors and textures will transport you! If you’re a fan of cookies that melt in your mouth and offer a burst of natural sweetness, then this recipe is for you. You’ll have a delicious cookie with just the right amount of butter, sugar, and a touch of vanilla! Plus the plump raisins add a delightful chewiness that complements the cookie’s soft texture. Today we’re going to share the recipe so you can make a batch, share with your loved ones and make lasting memories.
Ingredients are as follows:
1 1/2 C raisins
1 1/4 C water
1 tsp. vanilla
1 C butter, softened
1 C sugar
1/2 C brown sugar
2 eggs
1 tsp. vanilla
3 1/2 C flour
1 tsp. baking soda
1/2 tsp. salt
Directions:
Pre-heat oven to 350 degrees and spray cookie sheet(s) with non-stick cooking spray.
Put the raisins, water and vanilla into a pot and bring to a boil. Boil for one minute, turn off the heat; set aside to cool.
While the raisins are cooling, cream together the butter and sugars.
After those are creamed together, add eggs and vanilla; mix again.
Add the flour, baking soda and salt. Mix until incorporated.
Add the raisins and liquid; mix until combined. Adding the liquid from the raisins is what makes these cookies so flavorful and moist. The dough will look a little runny, however do not add more flour or you will end up with a dry cookie.
Drop tablespoons of dough onto prepared cookie sheet(s) about two inches apart. (I used foil and cooking spray since my cookie sheets are old!)
Bake in pre-heated oven for eight to ten minutes (the cookies will feel slightly firm to the touch). Remove from pan, allow to cool before serving.
Take a bite and enjoy!
