My daughter loves anything pumpkin and this week was a little stressful so I made her Pumpkin Yogurt! It’s made with golden raisins, greek yogurt, pureed pumpkin and a lot of spices. This snack is something you can whip up in a matter of minutes and it packs well in the lunchbox too. We even put some into freezer molds and made homemade popsicles…a simple yet satisfying treat!
Pumpkin Yogurt
Ingredients
- 1 cup golden raisins
- 2 cups plain non-fat Greek yogurt
- 1 15 ounce can pumpkin puree
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/8 teaspoon cloves
- 1/8 teaspoon allspice
Instructions
- Puree the raisins to a smooth paste in a blender.
- Add spices and pumpkin, puree until smooth.
- Fold pumpkin mix into yogurt until well combined.
- Serve cold.
