My daughter loves anything pumpkin and this week was a little stressful so I made her Pumpkin Yogurt! It’s made with golden raisins, greek yogurt, pureed pumpkin and a lot of spices. This snack is something you can whip up in a matter of minutes and it packs well in the lunchbox too. We even put some into freezer molds and made homemade popsicles…a simple yet satisfying treat!

Pumpkin Yogurt

Ingredients

  • 1 cup golden raisins
  • 2 cups plain non-fat Greek yogurt
  • 1 15 ounce can pumpkin puree
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/8 teaspoon cloves
  • 1/8 teaspoon allspice

Instructions

  • Puree the raisins to a smooth paste in a blender.
  • Add spices and pumpkin, puree until smooth.
  • Fold pumpkin mix into yogurt until well combined.
  • Serve cold.
