I’ve said before that I’ve had great success with a Keto diet, and now my daughter is doing it too. She has a sweet tooth as well and wanted something with coconut. I decided to make Keto Almond Joy Bites, and they are actually made in the microwave. It’s a simple recipe and you can actually use your favorite nut butter, like cashew butter, almond butter or even peanut butter like I did! Keto Almond Joy Bites (made in the microwave)
Ingredients
- 1/4 C butter
- 1/4 C coconut oil
- 10 pieces ChocZero Dark Chocolates
- 1/2 C peanut butter or your favorite nut butter
- 2 tsp. unsweetened cocoa powder
- almonds
- unsweetened coconut
Instructions
- Place the butter, coconut oil, ChocZero, and peanut butter into a microwavable bowl.
- Place in the microwave and heat (on high) for 30 seconds.
- Remove, stir and heat (on high) an additional 30 seconds.
- Stir in the cocoa powder and continue to stir until completely combined, heating more if needed.
- Pour into a lined 8 x 8 inch pan.
- Place as many almonds as you’d like into the melted mixture.
- Sprinkle the coconut on top.
- Place in the fridge for about 10-20 minutes to set up.
- Slice, serve and enjoy!
