I used V-Shape Nutritional Shake Mix made by ViSalus. This mix is low fat, low sugar, has fewer calories and lower in carbs than most protein powders. The flavor is sweet cream and it’s delicious! I have no problem having just a shake for breakfast now, but like I said, I like mixing it into recipes too!
Ingredients are as follows:
1 C whole wheat white flour
1/2 C V-shape nutritional shake mix, sweet cream flavor
2 tsp. baking powder
1/2 tsp. baking soda
2 Tbsp. powdered Stevia (or any sweetener)
dash of salt
1 tsp. vanilla
1/3 C applesauce
1 C unsweetened almond milk
1 C blueberries
icing:
2 ounces cream cheese, softened
1/2 Tbsp. V-shape nutritional shake mix, sweet cream flavor
1/2 C cream, you may need more if you want a thinner consistency
blueberries to garnish
Directions:
Preheat oven to 375 degrees; grease a muffin tin or line with wrappers.
Mix together the flour, shake mix, baking powder, baking soda, Stevia & salt.
Whisk in the vanilla, applesauce and almond milk.
Fold in the blueberries.
Evenly divide the batter into the muffin tin.
Bake for 20-25 minutes; until a toothpick inserted into the center of a muffin comes out clean.
Cool for five minutes, remove from pan & continue to cool on a wire rack. While they’re cooling, whisk together the cream cheese, shake mix & cream.
Spread the icing on top of the muffins.
Garnish with blueberries and enjoy!
