Pumpkin Pie Latte for One

It’s hard to believe Summer is almost over and Fall is fast approaching, however Fall is my favorite season.  I love everything about it, especially the latte’s!  A sugar free vanilla latte is my favorite, but I enjoy the Fall flavors as well.  My daughter loves anything pumpkin and has come to love this Pumpkin Pie latte.  It’s easy to whip up at home, doesn’t take a lot of time, and it saves you some money too.  I buy a can of pumpkin puree, spoon two tablespoons of it into each slot of an ice cube tray, and toss it in the freezer.  Once it’s frozen, we empty them into a container and keep it in the freezer for whenever we’re craving a Pumpkin Pie latte.  It makes it so convenient and there’s no waste either.  You can also make this Keto friendly by switching out the milk for unsweetened almond milk, or for a creamier version use half heavy whipping cream and half water plus your favorite sugar substitute.  No matter which version you try, I hope you enjoy this Pumpkin Pie latte!

  1. 1 C milk (or 1/2 C Cream + 1/2 C water for Keto)
  2. 2 Tbsp. pumpkin puree
  3. 1 Tbsp. sugar (or sugar substitute for Keto)
  4. 1 tsp.vanilla extract
  5. 1/4 tsp. pumpkin pie spice
  6. 1/4 cup strong hot coffee

  1. real whipped cream
  2. cinnamon or pumpkin pie spice
Instructions
  1. In a saucepan, add milk, pumpkin puree, and sugar; whisk together.
  2. Place over medium heat and bring up to a simmer.
  3. Remove from heat and stir in the vanilla, pumpkin pie spice, and the hot coffee.
  4. Pour into a mug, spoon on some whipped cream and sprinkle on some cinnamon or pumpkin pie spice.
  5. Serve and enjoy!
Notes
