I love making fudge, especially when it’s quick, easy and delicious!  I’ve made Peanut Butter Fudge, Rocky Road Fudge and even Nutella all in the microwave.  The old fashioned way takes so long and sometimes it’s gritty or doesn’t set up.  So I’m pretty happy with how many recipes I’ve been able to come up with that you can make in the microwave.  Now you can make a variety of flavors without all the hassle of doing it the long way.  This recipe is perfect to give as gifts, the holidays, or any time of year.  No matter when you’re having it, I know you’re going to enjoy!

Easy and so Creamy Mocha (microwave) Fudge

Ingredients

  • 4 Tablespoons real butter
  • 3 cups semi-sweet chocolate chips
  • 1 14 ounce can sweetened condensed milk
  • 1 tablespoon instant espresso coffee powder
  • 1 tablespoon vanilla

Instructions

  • 1. Line an 8 inch square pan with parchment paper, extending over the edges; butter the paper.
  • 2. Place the butter, chocolate chips, sweetened condensed milk and espresso powder in a large microwave bowl.
  • 3. Microwave for one minute.
  • 4. Stir and then microwave in 30 second increments until the chocolate has melted.
  • 5. Stir in the vanilla.
  • 6. Pour into pan; smooth out the top.
  • 7. Refrigerate until set, slice into pieces and enjoy!
