It’s finally summer; the sun is shining and the weather is nice and warm! This means I’m outside more and not wanting to be in the hot kitchen for hours. I use my crock pot a lot in the summer and I always love to make no-bake desserts. The other day my husband mentioned cheesecake, but I didn’t want to bake one so I made this simple no-bake cookies and cream cheesecake pie. It starts out with a store bought crust, however you could always make your own, then a few ingredients are tossed in and in no time at all you have a simple and delicious pie waiting for you!
12 ounces cream cheese, softened
2 tsp. vanilla
1/4 C butter, softened
1/2 C powdered sugar
3/4 C heavy whipping cream
15 cream sandwich cookies (oreo’s)
1 (9 inch) chocolate cookie pie crust
cookies to garnish
Directions:
Crush the 15 cookies into chunks; set aside.
Cream together the cream cheese, butter, vanilla and powdered sugar.
With a whisk, whip in the heavy whipping cream until fluffy.
Fold in the crushed cookies.
Pour into prepared crust.
I garnished mine with a few crushed cookies, you can choose however you like. Cover and place in the fridge for at least an hour.
Slice, serve and enjoy!
