My husband and I got married when were 20 and have been together for 26 years! We now have four kids so time with “just the two of us” is limited. One of our favorite times is when the kids are in bed and we get to sit and talk about everything. I normally make us a little snack so one of the first recipes I tried from “Date Night In” is Cafe’ au Lait Pudding; it is amazing! In this book you’ll find over 120 recipes to nourish your relationship and features 25 date-worthy occasions spread out among the four seasons.
Ingredients are as follows:
3/4 C heavy whipping cream
1/4 C espresso or strong brewed coffee
2 1/2 Tbsp. brown sugar
1 Tbsp. cornstarch
Pinch of salt
Whipped cream for serving
Directions:
Place the cream and espresso in a small saucepan over medium heat.
In a small bowl, mix the brown sugar and cornstarch together.
Add the sugar mixture to the cream mixture and stir to combine. Bring to a boil and boil for about a minute until it thickens; stir in the salt.
Place the pudding into two bowls (I only used one) and place a piece of saran wrap on top (I just grabbed a baggie). Refrigerate until cold.
Serve with whipped cream and enjoy!
