The weather is getting chilly which means I bake a lot more, and recently I made these Mini Pecan Pie Muffins.  They turned out quite delicious, they’re easy to make, only require a few ingredients, and you can whip them up in a few minutes.  I love how they are made in the mini muffin tin and would be perfect for your holiday cookie tray.  It’s something different from the usual cookie you’d expect around the holidays.  Plus you can make these ahead of time and freeze, and if by chance you don’t like pecans, you can always use another nut.  You’ll love the simplicity of this recipe and the taste too!

Mini Pecan Pie Muffins

Ingredients

  • 1 cup light brown sugar packed
  • 1 cup pecans chopped
  • 1/2 cup flour
  • 10 1/2 tablespoons butter melted
  • 2 large eggs

Instructions

  • Spray 20 mini muffin cups with nonstick spray; set aside. Preheat the oven to 350°F.
  • In a medium bowl, mix all of the ingredients together.
  • Spoon the batter into 20 mini muffin cups (about 3/4 full).
  • Bake for 18-20 minutes. Check with a tooth pick to see if they’re done.
  • Remove the muffins and cool on a wire rack.

Notes

Once they are completely cooled, place in a labeled freezer bag and freeze up to 2 months.
