May is National Egg Month so that gives me another reason to make breakfast.  Making breakfast on the weekends or even for dinner is a family favorite!  Sometimes I make casseroles the night before and stick them in the fridge, make a breakfast buffet, or just whip up some delicious waffles.  Waffles are perfect when they’re a little crispy on the outside and fluffy on the inside, and when they’re made with Pete and Gerry’s Organic Eggs  they always turn out scrumptious.  Plus you get to top them with all of your favorite toppings!  Pete and Gerry’s Organic Eggs has been in business for generations, sourcing eggs from small family farms, and they became they country’s first Certified Humane Free Range egg producer.  All the eggs are produced without antibiotics, hormones, pesticides, GMOs or animal byproducts.

Delicious Waffles with Pete and Gerry's

Ingredients

  • 2 1/4 C all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • dash of salt
  • 1/4 C butter
  • 1 Tbsp. vanilla extract
  • 1/2 C sugar
  • 3 egg yolks
  • 2 C buttermilk
  • 3 egg whites

Instructions

  • In a bowl, sift together flour, baking soda, baking powder and salt; set aside.
  • In a large bowl, cream butter,vanilla, & sugar until light and fluffy.
  • Beat in egg yolks.
  • Blend in flour mixture alternating with the buttermilk; set aside.
  • Beat egg whites until stiff peaks form.
  • Fold half of the whites into the batter; carefully fold in the other half.
  • Heat waffle iron; spray with non-stick cooking spray.
  • Spoon the batter onto preheated waffle iron.
  • Cook until golden and crisp.
  • Serve with your favorite toppings, and enjoy!
