Strawberry Crumble

Don’t you love it when you think something is going to turn out bad, but turns out fine…if not better!  That’s exactly what happened with this cake.  I started out making this into bars, however once I put together the ingredients and realized I was out of brown sugar, I knew it wasn’t going to turn out the way I wanted.  However, I continued on and actually am very happy with the way it turned out!  I don’t want to call it a bar because once I cut into it and took a bite, it started to crumble!  Now it’s a Strawberry Crumble that you should eat on a plate instead of your hands 😉  It’s easy to prepare and it turned out delicious!
Ingredients are as follows:
2 C flour
2 C powdered sugar
1 tsp. baking soda
1/2 C butter, softened
1/2 C margarine, softened 
2/3 C milk
1 egg yolk
1 tsp. vanilla
2 (12 ounce) bags of frozen strawberries, thawed & drained
1/3 C powdered sugar
1/2 C butter, softened
1 C sugar
3/4 C flour
1 C oatmeal
Directions:
Preheat oven to 350 degrees; grease a cookie sheet.
Cream together the flour, powdered sugar, baking soda, butter, and margarine.  Add the milk, egg yolk and vanilla; mix until creamy.
Spread into prepared pan; set aside.
Mix together the strawberries and powdered sugar.
Evenly spread them onto the batter; set aside.

Cream together the butter and sugar then mix in the flour and oatmeal.
Evenly sprinkle on top of the strawberries and batter.

Bake for 25-30 minutes; until golden brown.  Allow to cool.

Slice, serve and enjoy!

  9. Thank goodness you didn't have any brown sugar or else you wouldn't have come up with this great recipe! It looks so delicious. I'd probably sit down with a pan and a fork and just go at it.
