Pumpkin Spice Smoothie for an On-the-Go Breakfast!
Our mornings are quite hectic now that school has started. My husband leaves a little after 6am, then two kids a little after 7, one at 7:30 and the last at 8:30. Which means breakfast can also be hectic. I like to prep as much as possible the night before, however that doesn’t always happen so I’ll make some delicious Pumpkin Spice Smoothies. It’s filled with oats, flax, pumpkin and cinnamon which are all beneficial to your health. It’s a great way for the kids to start the day, and I know that they are having something good for them. Plus this Pumpkin Spice Smoothie whips up in a matter of minutes so even on the days you may be running late, you’ll have time to enjoy breakfast.
Pumpkin Spice Smoothie
Ingredients
- 1/4 c. quick cooking oats
- 1/2 c. water
- 1/2 c. pumpkin puree
- 1 T. ground flaxseed
- 1 c. skim milk warm
- Dash cinnamon
- Dash nutmeg
- Dash ginger
- Dash cloves
- Dash allspice
Instructions
- Combine oats and water; microwave for 30 seconds (under cook so it remains watery)
- Scoop oatmeal into blender.
- Add pumpkin, spices, ground flax and milk.
- Blend on low for a few seconds and then high until well blended.
- Thin with additional skim milk if needed.
- Sweeten with a drizzle of pure maple syrup or Stevia if desired.
- Pour into a glass and enjoy!
