Shortbread is a favorite of mine, and I love to have a good shortbread cookie with coffee.  I know shortbread cookies are very popular around the holidays, however I like to make them all year long.  They’re simple to make, they go with everything, they’re not too sweet and they simply taste delicious!  I love the buttery taste, that little crunch you get when you sink your teeth in, and how it melts in your mouth.  It amazes me how simple pantry ingredients can produce such a good cookie.  I make them into rounds so they are the perfect portion to pop in your mouth.  Once you try these, you’ll be making them to go with that morning coffee, afternoon tea, and even milk for dessert…enjoy!

Shortbread Cookie Rounds

Ingredients

  • 1 cup butter softened
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

Instructions

  • Preheat oven to 350 degrees F.
  • Cream butter and sugar until fluffy.
  • Stir in vanilla.
  • Add flour and mix well.
  • Cover dough and place in the fridge for half an hour.
  • Remove from fridge, break off little pieces, roll into a ball and place onto a cookie sheet.
  • Bake for 10 - 12 minutes.
  • Allow to cool for 2 minutes, remove from cookie sheet and place onto a cooling rack.
  • Take a bite and enjoy!
