Soft, chewy Lofthouse sugar cookies with a delicious buttercream!
A lofthouse sugar cookie is one of my favorite cookies! The chewy, soft sugar cookie and rich buttercream frosting go together perfectly. Today I decided to make the cookies into a bar and swap out the sour cream for vanilla yogurt. The vanilla yogurt gave it a more intense vanilla flavor which we loved. We will continue to make them with vanilla yogurt instead of sour cream from now on. Plus making them into bars was a real time saver and oh so easy. I colored my frosting purple since Easter is coming up, however any color will look pretty!

Ingredients are as follows:
Whip in the egg and egg white; mix until fluffy.
Stir in the vanilla yogurt and vanilla extract.
Fold in by hand, the flour, baking powder, and salt; mix until combined.
With damp hands, press the dough into the greased pan.
Bake 23-25 minutes; until a toothpick in the center comes out clean. Set aside to cool.
Cream the frosting ingredients (butter, powdered sugar, cream, vanilla & salt) together. Start with ¼C cream and if you’d like the frosting creamier, add more until desired consistency (I used almost a ½ C).
You can mix in some food coloring if you’d like. Frost the bars once they’re completely cooled.
Slice, serve and enjoy!
