Mexican Wedding Cookies

 
 
 
 
I love simple recipes and these cookies are as simple as can be; you take five ingredients and turn them into something delicious.  The first time I made them they went so fast that I had to make another batch the next day!  These would make a great addition to your holiday baking…or anytime of year.

Ingredients are as follows:

1 cup butter, softened 
1 tsp. vanilla
1/2 C powdered sugar
1/4 tsp. salt
2 C all-purpose flour


powdered sugar (to roll the cookies in)




Directions:

Preheat oven to 400 degrees.


Whip the butter and vanilla together.

Gradually mix in the powdered sugar; mix in the salt and flour.

Pinch off small pieces of dough; place on ungreased cookie sheet.

Bake for 11-13 minutes; slightly brown around the edges.

 
Immediately remove from cookie sheet and cool on a wire rack.
 
 
Before serving, roll in powdered sugar.
 
 
Take a bite and enjoy!

  2. any kind of nuts, coconut, dried cranberries…. any of these can be added…
    even a chocolate chip hidden in the middle.
    I've made these for over 40 years and ALWAYS delicious!
    I've even had friends say their gift of a dozen never made it home …all eaten in the car !
    Very delicious!

  3. This may sound silly but….do you use salted or unsalted butter? 🙂

    1. The recipe calls for unsalted, however you can use salted; you would just omit the salt in the recipe then 😉

  4. All the bakers in my family have been making these cookies for years, also with the chopped pecans. I make them both ways – love them! To me, they're basically shortbread. Thanks for posting this timeless classic recipe.

  5. I make cookies similar to these, except mine have finely chopped pecans in them. They are one of my favorite Christmas cookies!! Also I roll them in the powdered sugar as soon as they come out of the oven and again after they are completely cool…
