This is my recipe for peanut butter and oatmeal cookies that our family loves! I’ve been making it for years and it never fails me. However today I wanted to do something different with it. So I made them into a tart, filled them with a creamy peanut butter center and drizzled chocolate on top! The creamy center adds a wonderful touch and of course so does the chocolate. These would be great to make if you needed a dessert to take to a party because they’re simple to make and they look so cute!
3/4 C creamy peanut butter
1/4 C butter, softened
1/4-1/2 C powdered sugar (however sweet you prefer)
This recipe yields 36 mini tarts
Place small spoonfuls of batter into a greased mini cupcake pan.
Bake for 8-10 minutes or until golden brown. As soon as they come out of the oven take a wooden handle and push the center of the tart down.
Allow to cool for about ten minutes then remove from pans. While they’re cooling, cream together the peanut butter, butter and powdered sugar. Squeeze some filling into the centers of the tart.
Drizzle the melted chocolate on top.

These look great and I would definitely consider putting them on a special cookie tray at Christmas time…maybe with a drop of currant or strawberry jelly.
