Spring is here so it’s time to make some fruity desserts!  These Creamy Lemon Bars have a delicious crust that’s filled with a delicious lemon filling.  They firm up well, are not too tart, and cut into beautiful bars.  These were the perfect dessert for our Easter dinner, and will be made a lot more during the warmer months. 

Creamy Lemon Bars

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup 2 sticks butter, softened
  • 1 can 14 oz. NESTLÉ® CARNATION® Sweetened Condensed Milk
  • 4 large eggs
  • 2/3 cup lemon juice
  • 1 tablespoon flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 drops yellow food coloring optional
  • 2 tablespoon grated lemon peel
  • Sifted powdered sugar

Instructions

  • Preheat oven to 350° F.

  • Combine flour and powdered sugar in medium bowl.
  • Cut in butter until mixture is crumbly.
  • Press lightly onto bottom and halfway up sides of ungreased 13 x 9-inch baking pan.
  • Bake for 20 minutes or until an inserted tooth pick comes out clean.

filling

  • Beat sweetened condensed milk and eggs in large mixer bowl until fluffy.
  • Beat in lemon juice, flour, baking powder, salt and food coloring just until blended.
  • Fold in grated lemon peel; pour over crust.
  • Bake for 20 to 25 minutes or until filling is set and crust is golden brown.
  • Cool in pan on wire rack.
  • Refrigerate for 2 hours.
  • Sprinkle with powdered sugar, cut into bars and enjoy!
