Spring is here so it’s time to make some fruity desserts!  These Creamy Lemon Bars have a delicious crust that’s filled with a delicious lemon filling.  They firm up well, are not too tart, and cut into beautiful bars.  These were the perfect dessert for our Easter dinner, and will be made a lot more during the warmer months. 

Creamy Lemon Bars

Ingredients
  1. 2 cups all-purpose flour
  2. 1/2 cup powdered sugar
  3. 1 cup (2 sticks) butter, softened
  4. 1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
  5. 4 large eggs
  6. 2/3 cup lemon juice
  7. 1 tablespoon flour
  8. 1 teaspoon baking powder
  9. 1/4 teaspoon salt
  10. 4 drops yellow food coloring (optional)
  11. 2 tablespoon grated lemon peel
  12. Sifted powdered sugar
Instructions
  1. Preheat oven to 350° F.

  1. Combine flour and powdered sugar in medium bowl.
  2. Cut in butter until mixture is crumbly.
  3. Press lightly onto bottom and halfway up sides of ungreased 13 x 9-inch baking pan.
  4. Bake for 20 minutes or until an inserted tooth pick comes out clean.
filling
  1. Beat sweetened condensed milk and eggs in large mixer bowl until fluffy.
  2. Beat in lemon juice, flour, baking powder, salt and food coloring just until blended.
  3. Fold in grated lemon peel; pour over crust.
  4. Bake for 20 to 25 minutes or until filling is set and crust is golden brown.
  5. Cool in pan on wire rack.
  6. Refrigerate for 2 hours.
  7. Sprinkle with powdered sugar, cut into bars and enjoy!
