Like many of you, I’m always searching for new recipes to add to my fall collection, which is why I was so thrilled to discover the Hometown Harvest cookbook from Gooseberry Patch. I’ve been testing a few recipes lately, but one truly stands out: these amazing toffee bars. I’ve made homemade toffee countless times, but I never imagined turning it into a simple-to-make bar. Let me tell you—they are incredibly easy and taste absolutely divine. I can’t wait to make them again!

English Toffee Cookie Bars

Ingredients

  • 1 C butter softened
  • 1 C brown sugar
  • 1 egg yolk
  • 1 tsp. vanilla
  • 2 C all-purpose flour
  • 8 1 1/2 oz. milk chocolate candy bars (I used 1 C chocolate chips)
  • 1 C chopped walnuts

Instructions

  • Preheat oven to 350 degrees.
  • Cream together the butter and brown sugar.
  • Add the egg yolk and vanilla; stir to combine.
  • Mix in the flour.
  • Pat the dough into an ungreased 15 x 10″ cookie sheet. (I have to say, this dough was quite sticky, however I found that if I wet my hands a little it made spreading the dough a lot easier!)
  • Bake for 18-20 minutes; until lightly brown around the edges.
  • Remove from oven and immediately pour on the chocolate chips.
  • Wait a few minutes then evenly spread over the bars.
  • Sprinkle on the chopped nuts.
  • Slice, serve and enjoy!

  49. one of my favorite Fall recipes is Pumpkin Chicken Chili! I wasn't sure about trying it but boy am I glad I did- it is amazing! The pumpkin really balances out the spices in the chili and the chili is creamier with the pureed pumpkin! Also, the chicken is a fun twist and suits the chili much better than ground beef would, at least that's what I think!

  55. I also love my Grama's Homemade Vegetable soup. It's simple, hamburger, bouillon (since I don't have beef bones), barley, green beans, tomatoes and rotel, worcestershire and celery seed, then when it's about an hour from dinner time, shred carrots and potatoes and let them cook. serve with louisiana red hot sauce and soda crackers with butter 🙂
