I love finding ways to incorporate more veggies into our meals, but I have to admit, spinach and kale are not on the kids’ favorite list. We have family fun nights all the time where we pick some movies and make all kinds of foods to enjoy while we’re watching. I had some spinach and kale so I decided to make a quick and easy dip that everyone would love. This Hot Spinach, Kale & Bacon Dip came together quickly and uses a ton of fresh ingredients. Once it was done I paired it with Van’s Simply Delicious® Fire-Roasted Veggie crackers to keep the veggie theme going.
We love these crackers because not only are they gluten-free, they are wholesome, nutritious, whole grain, and made with simple ingredients! I pick mine up at Target where they have a variety of flavors like: The Perfect 10, Fire Roasted Veggie, Say Cheese!, and Lots of Everything. Everyone in the family has a different preference so I normally pick up a box of each.
Once we got home I sauteed the onions until translucent, then added in the garlic, spinach and kale.
Cook for about 5-8 minutes until it wilts down.
Then you mix in the cream cheese, sour cream, real bacon bits, Parmesan cheese, salt, pepper and milk.
Stir that all together and then place half into one ramekin. With the other half I like to add in a few dashes of hot sauce to spice it up a little; place into the other ramekin. I then sprinkle on a little more Parmesan cheese, place a few drops of hot sauce on top of the one so we know which one it is while baking.
Place in the oven and bake for 15-20 minutes; until golden brown on top.
Grab the crackers, dip and a serving tray.
Place the dips onto the tray, arrange the crackers around them then serve and enjoy!
Hot Spinach, Kale & Bacon Dip
Ingredients are as follows:
1 small onion, diced
1 1/2 C chopped kale
2 C chopped spinach
1 Tbsp. minced garlic
1/4 tsp. salt
1/4 tsp. pepper
4 ounces cream cheese, softened
1/4 C sour cream or plain greek yogurt
2 Tbsp. real bacon bits
1/4 C shredded Parmesan cheese + 1 Tbsp.
1 Tbsp. milk
Directions:
Preheat oven to 350 degrees; grease two 4 inch ramekins.
- Saute’ the onions until translucent, then add in the garlic, spinach and kale.

- Mix in the cream cheese, sour cream, real bacon bits, Parmesan cheese, salt, pepper and milk.
- Stir and then place half into one ramekin. With the other
