An ode to Elvis Presley…a decadent peanut butter sheet cake
lathered with a creamy banana frosting!
While thinking of flavor combinations the other I day I thought about Elvis Presley and how he loved peanut butter and banana sandwiches. I’ve made a sandwich like that before and enjoyed it so I knew I liked the flavors. At first I was going to make a banana cake with peanut butter frosting, but then I saw there were a million recipes like that already! So I decided to flip it around and make a peanut butter cake with a banana frosting. I’m happy to say that not only is it easy to make, but quite delicious too. I think Elvis would be quite happy!
Ingredients are as follows:
cake:
1 3/4 C brown sugar
1 tsp. baking soda
2 C flour
1/2 tsp. salt
1 C butter
1 C water
1 C creamy peanut butter
1/2 C milk
2 eggs
1 tsp. vanilla
frosting:
1 ripe banana, softened
1/2 C butter
2 1/2 C powdered sugar
1 tsp. vanilla
Directions:
Preheat oven to 350 degrees; grease an 11.50 x 17.25 inch sheet pan.
Mix the brown sugar, baking soda, flour and salt together; set aside.
Melt the butter, water and peanut butter; bring to a boil.
Pour into the dry ingredients.
Mix until combined.
Mix in the milk, eggs and vanilla.
Pour into prepared pan.
Bake for 15-18 minutes; until a toothpick in the center comes out clean.
While the cake is cooling, mash up a banana.
Cream in the butter and vanilla.
Whip in the powdered sugar; mix until fluffy.
Frost the cooled cake.
Slice, serve and enjoy!
