Last weekend was Father’s Day and I wanted to bake something not only for my husband, but also my dad. Being that they both like cheesecake I thought I’d make this recipe and give half to each of them. These mini cheesecakes are simple to make, they only require a few ingredients and are baked in a matter of minutes! We topped ours off with cherries, however you can choose whatever you like. Next time we’re going to try strawberry pie filling!

Ingredients are as follows:
vanilla wafers
2 (8 ounce) packages of cream cheese, room temperature
1/2 C sugar
2 eggs
1 tsp. vanilla
1 can cherry pie filling
Directions:
Preheat oven to 350 degrees; line about one and a half muffin trays with paper liners.
Place a vanilla wafer into each paper liner; set aside.
Cream together the cream cheese and sugar until fluffy.
Whisk in the eggs and vanilla until incorporated.
Pour batter into liners making sure it’s about 3/4 filled up.
Bake for 15-18 minutes.
Allow to cool completely then spoon some of the pie filling on top.
Serve and enjoy!
