Chocolate Yule Log

Chocolate Yule Log
Ingredients
Cake:
- 4 eggs separated
- 1 C sugar divided in half
- 1 tsp. vanilla
- 1/2 C flour sifted
- 1/4 C cocoa sifted
- 1/8 tsp. salt
White frosting:
- 1/4 C butter softened
- 2 C powdered sugar
- 1 tsp. vanilla
- 2-3 T. cream or milk
Fudge Frosting:
- 1/4 C butter softened
- 2 C powdered sugar
- 1 tsp. vanilla
- 1/2 C cocoa
- 2 T. cream or milk
Instructions
- Grease a cookie sheet or jelly roll pan. Preheat oven to 350 degrees.
- Beat egg whites and 1/2 C sugar until stiff peaks form; set aside.
- Beat egg yolks and the other 1/2 C sugar until pale yellow.
- Mix in flour, cocoa and salt. Stir until combined.
- Fold in the egg whites by hand.
- Pour into prepared pan.
- Bake in preheated oven for 12-15 minutes; until golden brown.
- Let rest for five minutes then flip out onto a towel dusted with cocoa or sugar. Roll it up and set aside to cool.
- Cream together the butter, powdered sugar, vanilla and cream.

- Unroll the cake and evenly spread the white frosting on the inside.
- Roll it back up and frost the outside with the fudge frosting.
- Slice, serve and enjoy!
