Danish Cherry Cheesecake

 
 
 
 
We loved this dessert!  So much that I made it twice in two days!  I wasn’t quite sure what to name it so I just called it how the layers were done.  A layer of cake danish dough, then cherries, then a decadent layer of cream cheese that turns out like creamy cheesecake.   We ate it while it was a little warm and it was perfect!  This would be a wonderful dish to make for Mom this Sunday 🙂  Happy Mother’s Day to you all!
 
 

Ingredients are as follows:
batter:
6 Tbsp. butter
2 eggs
6 ounces greek vanilla yogurt (this gives the dough a little tart flavor)
3/4 C sugar
1 tsp. vanilla
1 1/2 C flour
2 tsp. baking powder
1/2 tsp. salt 
 
21 ounce can of cherry pie filling
cheesecake:
16 ounces cream cheese, softened
3/4 C sugar
 
 
 
 
 
Directions:
 
Preheat oven to 350 degrees; grease a 9 x 13″ pan.
 
In a medium size bowl, melt the butter (on low heat) in the microwave.
 
 
 
 Whisk in the eggs, yogurt, sugar and vanilla.
 
 
 
Mix in the flour, baking powder and salt.
 
 
 
Spread batter into greased pan.
 
 
 
Spread the cherry pie filling evenly on top, leave an inch border around the pan.
 
 
 
In a separate bowl, mix the cream cheese and sugar together.
 
 
 
Place dollops of the cream cheese mixture on top of the pie filling.
 
 
 
Spread it out a little, it doesn’t have to be perfect 🙂
 
 
 
Bake for 35-40 minutes; until the edges are golden brown.
 
 
 
Allow to cool in the pan for about 15 minutes.  Slice, serve and enjoy!

  3. I HAVE LOTS OF FRESH RASPBERRIES THAT HAVE SOFTENED. CAN I PUREE THEM AND USE THEM INSTEAD OF CHERRY PIE FILLING?

    1. I've never made it with pureed fruit so I'm not really sure. I think it would be best to puree the fruit then thicken it up a bit with a slurry (cornstarch/water) since pie filling has a thicker consistency.
