Grandma’s Simple Roast Chicken

Grandma’s simple roast chicken recipe is made with love. Her ingredients were pure, simple and delicious and whatever is in the garden.

 

My mom, Mary Wagner, always said that the best recipes were never written down. This simple roast chicken recipe is her beautiful way of letting us into her world.  I remember watching her in the kitchen, not with a measuring cup in hand, but with a twinkle in her eye.  When I asked her how much salt to use, she’d just pinch a little between her fingers and smile, saying, “Enough to make you smile, honey.” For the herbs, it was always whatever was fresh in the garden, a little thyme, a little rosemary, picked with love.  She wasn’t about rigid rules; she was about intuition and heart. This “recipe” with its measurements like “about 4 lbs” and “A sprinkle of paprika” is her loving compromise for those of us who need a roadmap.
