How to Keep Hermit Cookies Soft

If you’ve ever baked a batch of Hermit Cookies only to find them turning crisp after a day or two, you’re not alone! These old-fashioned favorites are known for their chewy, spiced texture — but a few simple tricks can help them stay soft and delicious all week long.  Whether you love the traditional Old-Fashioned Hermit Cookies or my softer, iced version — Chewy Molasses Hermits with Vanilla Icing — these tips will help you keep that perfect chewy bite every time.

🧁 1. Don’t Overbake

The most important step is pulling them from the oven before they look fully done. Hermit Cookies continue to bake as they cool, so the centers should still look soft when you remove them. Let them rest on the pan for 5 minutes, then transfer to a wire rack.

🍯 2. Use Enough Molasses

Molasses adds flavor and moisture. It acts like a natural humectant, drawing in moisture from the air and keeping your cookies chewy. In my Chewy Molasses Hermits recipe, I increase the molasses slightly for that reason.

🧈 3. Store Them Right

Once the cookies are completely cooled, place them in an airtight container lined with wax paper or parchment between layers. Add a small piece of sandwich bread to the container — the cookies will absorb moisture from the bread and stay soft.

☕ 4. Glaze After Cooling

If you’re adding icing, make sure cookies are fully cool first. A warm cookie will melt the glaze and make it soak in, which can cause a sticky surface instead of a soft bite.

Hermit Cookies are actually better the next day! The spices meld, the texture evens out, and the molasses keeps them tender. Bake them one day ahead for the best flavor and chew.
