A favorite holiday dessert is the Chocolate Yule Log and now there’s a Breakfast Yule Log too!   This delicious yule log consists of eggs, cheese, kale and bacon so it’s lower in carbs, has plenty of protein and a good amount of fat.  It’s the perfect breakfast if you’re following a keto diet like me!  A lot of the breakfast casseroles include bread or potatoes so it’s nice to find something that doesn’t and still tastes delicious.  If by chance you don’t like goat cheese, you can always swap it out and even swap the kale for spinach.  This can be made ahead of time then reheated so it’s perfect for busy mornings during the holiday season.

Breakfast Yule Log

Ingredients

  • 12 eggs whisked
  • 4 oz goat cheese
  • 1 bunch kale
  • 12 slices bacon cooked
  • ¼ c water

Instructions

  • 1. Preheat oven to 375 degrees; line baking sheet (with sides) with parchment paper and lightly spray with non-stick spray.
  • 2. Pour eggs onto parchment and bake for approximately 12 minutes or until egg is fully cooked.
  • 3. Remove stems from kale and chop.
  • 4. Sautée chopped kale in a pan; add water to pan, stir occasionally until water is cooked off.
  • 5. Remove “egg sheet” from the pan and place on a large cutting board.
  • 6. Spread goat cheese to cover the eggs.
  • 7. Layer bacon and kale over the cheese.
  • 8. Roll egg sheet into a log.
  • 9. Cut slices of the log, serve and enjoy!
