There are so many wonderful people who share my recipes on Facebook and I am so grateful to all of you!  Whenever someone suggests a recipe I always try to get one made and hopefully they’ll like it.  Recently Kevin, who shares my recipes all the time mentioned that he’d like something with Penuche.  Honestly, I had never heard of it so I had to look it up.  Once I did, I could see why he asked.  It’s a mixture of butter, brown sugar and cream…what’s not to love?  I finally came up with a recipe that I was happy with and I’m so excited to share it with all of you!
Ingredients are as follows:
muffins:
1 1/2 C flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 tsp. baking soda
1 apple, peeled & diced
1/2 C butter, softened
1/2 C brown sugar
1/2 C white sugar
1 C applesauce
1 tsp. vanilla
 
frosting:
1/2 C butter
1 C brown sugar
1/4 C cream
1 3/4 C powdered sugar
Directions:
Preheat oven to 350 degrees; grease a muffin (or cupcake) pan.
Mix flour, cinnamon, nutmeg, salt & baking soda together.
 
Add the diced apple and stir to coat all the pieces; set aside.
 Cream the butter, brown sugar and white sugar together.
 
 Mix in the applesauce and vanilla.
Slowly mix in the dry ingredients and stir until incorporated.
Evenly divide batter into the muffin pan.
Bake 15-18 minutes; until golden brown around the edges.  Allow to cool.
 For the frosting, melt the butter then add the brown sugar.
Bring to a boil, lower heat and continue to cook & stir for two minutes.
Pour in the cream and bring back up to a boil while stirring.
Remove from heat and cool until lukewarm.
Pour into a bowl and slowly whip in the powdered sugar.
Frost the muffins.
Take a bite and enjoy!
