If you ask my family they’ll say I’m a coffee addict! I literally drink coffee from the time I wake up until the time I go to bed…and no, the caffeine doesn’t keep me up! There’s just something about coffee that I love so much. I love having it piping hot in the morning, then I switch to iced coffee in the afternoon and then back to a hot cup or two before I go to bed. I make my own iced coffee so I can control the calories and sugar…then I saw that International Delight made an Iced Coffee Light with 1/3 fewer calories. I couldn’t wait to try it! Let me tell you, this is divine; it’s rich, creamy and not too sweet. Now all I have to do is go to the fridge, pour a cup and enjoy!
Being that I love coffee so much I decided to use it in a dessert recipe too! I came up with Mocha Cheesecake Parfaits. They’re quick, easy and a coffee lovers dream dessert!
Ingredients are as follows:
1 (15.35 oz.) package chocolate sandwich cookies
1 (3.4 oz.) box of cheesecake flavored instant pudding
1 C International Delight Light Iced Coffee, Mocha flavored
8 ounces 1/3 less fat cream cheese, softened
8 ounces whipped cream
Directions:
Crush the cookies into a fine crumb mixture; set aside.
Whisk together the pudding and International Delight iced Coffee; set aside.
Cream together the cream cheese and whipped topping.
Mix the pudding mixture into the cream cheese mixture.
Place a layer of cookie crumbs into your parfait glass.
Then place a layer of pudding/cream cheese mixture on top.
Repeat layers until the glass is full and sprinkle more crumbs on top; enjoy!
