Breakfast is one of my favorite meals, and I’ll be honest, during the week I don’t eat it so on the weekends I definitely make sure it’s something I’ll enjoy. Take a look at this Strawberry Breakfast Pie…isn’t it beautiful? It’s packed with oats, yogurt and coconut then a layer of strawberries are arranged on top. Not only is this delicious, but it’s easy to prepare and it only takes about half an hour to bake. You can whip this up during the week or enjoy it for Sunday brunch!
Strawberry Breakfast Pie
Ingredients
- 2 c. old-fashioned oats
- 1 tsp. baking powder
- 1 Tbsp. brown sugar
- 1/4 t. kosher salt
- 2 c. strawberries sliced
- 1 c. skim milk
- 1 egg
- 1/2 c. plain fat-free Greek yogurt
- 1/2 tsp. vanilla extract
- 1 Tbsp. unsweetened shredded coconut
Instructions
- Preheat oven to 375ºF. Spray a pie pan with non-stick cooking spray.
- In a large bowl, combine dry ingredients.
- In a separate bowl, whip together wet ingredients.
- Mix wet ingredients into dry.
- Pour mixture into pie pan.
- Arrange strawberries on top of the oat mixture.
- Sprinkle with coconut.
- Bake for 35 minutes until middle is set and edges begin to brown.
- Slice, serve and enjoy!

Can you use frozen strawberries?
Frozen strawberries contain more water so you would have to thaw them first.
