Look at all that ooey gooey caramel! Caramel is one of my favorites and I love adding it to recipes. For this scrumptious caramel center, I started out with Goetze’s Caramel Creams

These are a childhood favorite of mine, and even as I get older, I still love them! There’s something about that creamy soft center enrobed with all that chewy caramel. Once you sink your teeth in, there’s no stopping!

I started with a scrumptious chocolate cookie bar, mixed the caramel creams with some heavy cream to make that ooey gooey caramel filling and then topped it off with more cookie dough. Once it’s baked it turns into a rich chewy chocolate cookie bar filled with creamy caramel.

Ooey Gooey Caramel Cookie Bars

Ingredients

  • 1 14 ounce bag Goetze’s Caramel Creams, unwrapped
  • 2 T heavy cream
  • 1/2 C butter softened
  • 1/4 C white sugar
  • 3/4 C brown sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1-1/2 C all-purpose flour
  • 1 C milk chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Place the unwrapped caramels and cream into a saucepan and place over medium heat.
  • Stir until caramels melt and cream is incorporated; keep warm and set aside.
  • Cream the butter, white sugar, and brown sugar until smooth.
  • Stir in the egg and vanilla.
  • Mix in the baking soda, salt, and flour; stir until combined.
  • Fold in the chocolate chips.
  • Press 3/4 of the dough into a 9 x 9 inch greased baking pan.
  • Pour the caramel on top.
  • Place remaining 1/4 dough in dollops all over the top.
  • Bake for 28-30 minutes, or until golden brown around the edges.
  • Allow to cool in the pan for at least 15 minutes.
  • Slice, serve and enjoy!

Notes

If you wanted to save time, you could use refrigerated cookie dough for the base and top.
