We’re in the middle of summer and it’s been quite hot!  Believe me, I’m not complaining.  I love the warm weather especially when I have a delicious homemade popsicle to cool me off.  Ginger Cantaloupe Popsicles are easy to make, in fact the kids can actually make them on their own.  It will give them a fun project to do in the kitchen and then a treat to enjoy outside.  We love making our own popsicles because we know exactly what’s going in them.  You’ll only need a few ingredients before you’re enjoying these refreshing Ginger Cantaloupe Popsicles!

Ginger Cantaloupe Popsicles

Ingredients

  • 3 slices of fresh ginger
  • 1/4 cup sugar
  • 1 ripe cantaloupe
  • Sliced strawberries optional
  • Popsicle forms and popsicle sticks

Instructions

  • In a small sauce pan, add the sugar and 1/2 cup water over medium heat.
  • Cook just until the sugar has melted.
  • Remove from heat and drop in ginger; set aside until cooled.
  • Slice cantaloupe in half and scoop out seeds.
  • Spoon cantaloupe flesh into a blender; blend until smooth.
  • Remove ginger from syrup and add just enough of the cooled ginger syrup to sweeten as desired. (Save the remaining syrup for another use.)
  • Pour into popsicle molds and freeze overnight.
