We’re in the middle of summer and it’s been quite hot!  Believe me, I’m not complaining.  I love the warm weather especially when I have a delicious homemade popsicle to cool me off.  Ginger Cantaloupe Popsicles are easy to make, in fact the kids can actually make them on their own.  It will give them a fun project to do in the kitchen and then a treat to enjoy outside.  We love making our own popsicles because we know exactly what’s going in them.  You’ll only need a few ingredients before you’re enjoying these refreshing Ginger Cantaloupe Popsicles!

Ginger Cantaloupe Popsicles

Ingredients
  1. 3 slices of fresh ginger
  2. 1/4 cup sugar
  3. 1 ripe cantaloupe
  4. Sliced strawberries (optional)
  5. Popsicle forms and popsicle sticks
Instructions
  1. In a small sauce pan, add the sugar and 1/2 cup water over medium heat.
  2. Cook just until the sugar has melted.
  3. Remove from heat and drop in ginger; set aside until cooled.
  4. Slice cantaloupe in half and scoop out seeds.
  5. Spoon cantaloupe flesh into a blender; blend until smooth.
  6. Remove ginger from syrup and add just enough of the cooled ginger syrup to sweeten as desired. (Save the remaining syrup for another use.)
  7. Pour into popsicle molds and freeze overnight.
