Here’s another recipe featuring coconut and bananas; yesterday I featured Tropical Banana Coconut Flax Pancakes.  Our family loves breakfast so today it’s french toast!  The bread (I use whole wheat) is dipped into a mixture of blended bananas and coconut milk so it really enhances the flavors quite well.    This is the perfect breakfast for the whole family to enjoy!

 

Ingredients are as follows:  

1 banana
1 cup milk
1 cup coconut milk
1 teaspoon vanilla
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 teaspoons cornstarch
1/4 teaspoon salt
12+ slices bread
2 T Carrington Farms Coconut Oil

Directions:  

  1. Heat
    griddle and brush with coconut oil.
  2. Blend remaining ingredients (except
    bread)
    in a blender until smooth.
  3. Pour into a shallow dish; submerge
    each slice in mixture and place on griddle.
  4. Cook till golden brown, then
    flip over to cook other side. Serve with maple syrup.
