My gram makes delicious food! There is nothing better then going to her house and enjoying Ham Pot Pie, moist Raisin Cookies, or fresh Pizzelles. Everything is from scratch and it’s always divine. She makes Anise and Vanilla Pizzelles, but my favorite are the vanilla. Years ago I bought a Pizzelle maker from an elderly lady, and she said it was used for many years and she hopes I continue to do so too. Well I certainly do! Pizzelle batter comes together quickly and you can make a batch in no time at all. Hopefully they’ll become a family favorite for you too!
Ingredients are as follows:
1/2 C butter
1 Tbsp. vanilla
3 eggs
3/4 C sugar
1 3/4 C flour
2 tsp. baking powder
Directions:
Melt the butter in the microwave then add the vanilla.
Whisk in the eggs.
Mix in the sugar until combined.
Fold in the flour and baking powder.
Slowly stir until a thick batter forms; allow to rest for about 5 minutes.
Heat the pizzelle maker and spray with cooking spray.
Place a dollop of batter onto the center of each mold.
Close the lid and cook for about 2 minutes; until golden brown.
Allow to cool; or while warm you can shape them. Continue with the remaining batter.
Serve and enjoy!
Love pizzelle. What do you fill them with, would they not get soggy?
I filled them with sweetened cream cheese, and I fill them right before serving so they don't get soggy 🙂
