No butter, no eggs, no worries…Wacky Cake to the rescue!
In the mood for cake, but realize you’re out of eggs or butter? That happened to me the other day and then I remembered a recipe from my eighth grade home-ec class called Wacky Cake (or depression cake). My daughter wanted to help bake this so we tried to make it as simple as possible; we changed a few ingredients and mixed it in the pan. Believe me, you can’t get any easier then this! It uses ingredients found in your pantry and bakes up in half an hour. I’m really surprised that I had forgotten about this for so many years, but no need to worry, it’ll be on our dessert menu quite often and I hope it’s on yours too!
Ingredients are as follows:
1 1/2 C flour
1 C sugar
1/2 tsp. salt
1 tsp. baking soda
1/3 C cocoa powder
1/3 C oil
1 Tbsp. white vinegar
2 tsp. vanilla
1 C water
Directions:
Preheat oven to 350 degrees; grease an 8 x 8 inch pan.
Place the flour, sugar, salt, baking soda and cocoa powder into the pan.
Take a fork and mix it all together (yes, it’ll stick to the sides a little).
Add in the oil, vinegar and vanilla.
Then pour the cup of water on top.
Stir it all together until combined (make sure you scrape down the sides).
Bake for 25-30 minutes; until a toothpick in the center comes out clean; set aside to cool.
Frost with your favorite icing!

8 ounces cream cheese, softened
1/4 C butter, softened
2 tsp. vanilla
2 C powdered sugar
Cream together the cream cheese, butter and vanilla. Add the powdered sugar and mix until nice and fluffy. Spread onto the cooled cake and enjoy!
It's also good with peanut butter frosting too!
